Over a decade ago, Hugo sparked a trout revival, recognizing the unique qualities of trout raised on the Test and Itchen farms. Since then, ChalkStream has been producing sustainably farmed trout, grown slowly over two years to ensure lean, healthy, low-fat fish. The pristine waters of the Test and Itchen rivers, combined with the farmers' skill and care, result in trout with a remarkably clean taste.
